Title : Thin nanostructured films as food packaging
Abstract:
Nanoparticles included in food packaging could adsorb oxygen, produce reactive oxygen species and destroy microorganisms in food to prolong the food storage. Antimicrobial packaging is not still in the market, but copper, Zink and TiO2 are reported as promising antimicrobial materials. Thin films obtained by magnetron sputtering of TiO2: Cu:Ag as packaging of Yellow cheese and formed ham were investigated. Microbial quantity was determined during 3 months after the start of experiment. The metals in the thin slice of the food mass were determined using ICP AES. In both product the metal concentration raised from the first till the end of experiment. The results have shown that thin films obtained by magnetron sputtering are not stable on glass surface and cannot be used as food packaging that way.
